Barbecued chicken is an excellent local treat. Called Chicken Inato, or simply lechon manok, each restaurant has its own take on the seasonings used to make the sauce.

In Dumaguete, there are many small eateries specializing in this Philippine treat. Cooked over an open charcoal fire, and basted with a flavorful marinade, it is served on a large bamboo sqewer. Most often the chicken is comprised of a leg and thigh uncut, some establishments offer a wing and partial breast cut. If you "dine in", you will be served the still sqewered chicken on a plate with a spoon and fork. In addition you will either be served or offered self serve a dip unique to the Philippines. The dip is a combination of vinegar, soy sauce, Calamansi (small lemon like fruit), and optional cili, or hot pepper. Rice is sometimes included in the price, other times it is optional.
